Kefta - Moroccan minced meat
I am pretty sure you all know about the Middle Eastern kefta or kofta and you probably love it. Well, at least I do. But you have to try the Moroccan version, because yes, they taste different.
In Morocco, kefta is like an institution, every single family knows where to buy and eat the best kefta and whole families usually go over and over to the same spot to find it.
The best places to enjoy kefta are usually in the suburbs and small towns, where the butchers not only sell meat but also offer to grill and serve it, along with a super sweet teapot of Moroccan mint tea.
Moroccan kefta is very herby and aromatic. I love it grilled because it gives it and extra smoky taste but there are plenty of other ways to enjoy it, pretty much like any type of seasoned minced meat!
KEFTA
INGREDIENTS
Serves 4
450g minced beef and/or lamb (15% to 20% fat)
1 medium onion, grated
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh coriander
Leaves of 4 mint sprigs, chopped
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper
Pinch cayenne pepper
METHOD
• In a large bowl, combine all the ingredients together. Use your hands or a large spoon to incorporate the meat, the onion, the herbs and the spices together.
• Shape and cook as desired.
